Overnight Strawberry Chia Pudding

Breakfast is served with this healthy strawberry overnight chia pudding on the blog.

If you’re like me, it’s hard trying to figure out what to make for breakfast. Especially when you’re working full time and just don’t have the time to sit down and make a proper breakfast. And, let’s be honest, those granola bars aren’t doing you any good when it comes to nutrition.

I really love the overnight chia pudding idea. You can customize it with whatever you have on hand in your fridge or cupboard and all you really need is chia seeds and almond milk or coconut milk. It sits overnight so the next day you can grab and go. They also last up to a few days in the fridge so making several big batches ahead of time just saves you so much time.

Follow along as I share my recipe for this strawberry chia pudding:

INGREDIENTS:

  • 6 strawberries
  • 4 tbsp. chia seed
  • 1 1/4 cup of almond milk (coconut milk & cashew milk works too)
  • 1 tsp. vanilla extract
  • 1 tsp. honey

GARNISH:

  • 2 -3 strawberries
  • 1/2 cup of blueberries
  • 1 tbsp. shredded coconut

INSTRUCTIONS:

In a blender, add all of your ingredients except the chia seeds and blend until smooth. Pour mixture over chia seeds in a large bowl. Whisk or shake well (if the bowl has a lid). Let the mixture sit on the counter for 10 minutes then place in the fridge for a minimum of 4 hours or leave overnight.

Take it out of the fridge the next morning, give it a good stir. If you find the mixture is too runny, add more chia seeds. If you find it too stiff, add more milk.

Top with your favourite toppings and enjoy!
