Sometimes I find myself in the mood for something to cool me down after those hot and humid days. Most popsicles out there are filled with artificial sweeteners and sugars that aren’t the greatest. This popsicle recipe is full of good ingredients and it takes only minutes to whip up but the hard part? Waiting for them to freeze.
If you’re not a fan of blueberries or you’re making this recipe when they’re not in season, add any of your favourite berries to this mix. You can also choose to add a variety of berries to sweeten up these popsicles even further.

INGREDIENTS (Makes 8)
- 1 can of coconut milk (400 ml)
- 2 tbsp of maple syrup
- 1 tsp vanilla syrup
- 1 heaping cup of fresh blueberries
INSTRUCTIONS
- In a blender, mix the coconut milk, maple syrup and vanilla together until mixed well
- Add the blueberries and pulse until the blueberries are smashed but not pureed
- Pour the mixture into a popsicle mold and freeze for a minimum of 5 hours over overnight
