These stuffed avocados are an easy and healthy alternative to lunch or a mid-afternoon snack!
I find around this time of year, it’s hard to eat healthy foods or to find the right kind of snacks that fill you up until dinner. I found these stuffed avocados on Pinterest and added a few ingredients that I personally like. Follow along and try this recipe for yourself!
INGREDIENTS:
- 1 ripe avocado
- 4 to 5 finely chopped grape tomatoes
- 1 small cucumber finely chopped
- 3 to 4 mint leaves finely chopped
- 1/4 cup of crumbled feta (low fat)
- 1/2 lemon squeezed
- 1 tbsp of olive oil
- Salt and pepper to taste
- Top with pomegranates (optional)
INSTRUCTIONS:
- Scoop out the avocado and chop into small chunks
- Finely chop the cucumber, tomatoes, mint leaves and feta, place in a small bowl
- Pour in the lemon, olive oil, and salt and pepper to taste
- Give it a good mix
- With a spoon, scoop your mixture back into the avocado shells
- Top with pomegranates and more mint leaves
- Enjoy!
