Lately breakfast has been kind of a big deal at our place. Being an anti-breakfast person before, I’ve recently discovered that actually eating breakfast gives me a lot of energy in the morning (I know…big surprise). Anything that’ll keep me full until noon is perfect! So recently I’ve hopped on the chia pudding bandwagon and I’m kind of obsessed.
There are literally a million ways to change up your chia pudding which is probably why I like it so much. It keeps you full and it is absolutely customizable. It’s always a guarantee that you’ll have at least 2 to 3 ingredients in either your fridge or cupboard that would be yummy toppings for this breakfast. So I wanted to share my way of how I make my chia seed pudding.
You make this before you go to bed (you can leave it in the fridge for a minimum of 45 mins but who has 45 mins in the morning? I’m using that for sleep thank you).
So grab a jar, a mug, a glass, pretty much anything that fits into something you can eat out of.
Throw in every ingredient. That’s it… throw in your chia seeds, oats, almond milk, vanilla extract and cocoa. Give it the best shake of its life. Maybe grab a spoon and stir it around for good mixture.
Then comes the hardest part of this entire process…wait for it… you put it in the fridge and go to bed!! Let the chia seeds and oats do their magic.
Next morning, go ahead and take it out of the fridge.
Cut up your banana, sprinkle some granola and drop a few berries in the middle and BAM you have the most beautiful breakfast in the world. Now all you have to do is grab a spoon, sit back with a cup of coffee and enjoy.
INGREDIENTS
- 1 tbsp of chia seeds (don’t get the ground version – I don’t know what that does or if that’ll work)
- 1/4 cup quick oats
- 1/2 cup of almond milk (unsweetened vanilla)
- 1 tsp vanilla extract
- 1/2 tbsp of cocoa powder
TOPPINGS (totally optional)
- Granola
- A few blueberries (or any type of berry you have in your fridge)
- 1/2 banana
QUICK INSTRUCTIONS
- Throw all your ingredients into a jar
- Mix well
- Leave in the fridge overnight
- Next morning, take it out and sprinkle your granola, chop 1/2 of the banana and sprinkle a few blueberries on top
