Stuffed avocados

These stuffed avocados are an easy and healthy alternative to lunch or a mid-afternoon snack!


I find around this time of year, it’s hard to eat healthyΒ foods or to find the right kind of snacks that fill you up until dinner. I found these stuffed avocados on Pinterest and added a few ingredients that I personally like. Follow along and try this recipe for yourself!

INGREDIENTS:

  • 1 ripe avocado
  • 4 to 5 finely chopped grape tomatoes
  • 1 small cucumber finely chopped
  • 3 to 4 mint leaves finely chopped
  • 1/4 cup of crumbled feta (low fat)
  • 1/2 lemon squeezed
  • 1 tbsp of olive oil
  • Salt and pepper to taste
  • Top with pomegranates (optional)

INSTRUCTIONS:

  • Scoop out the avocado and chop into small chunks
  • Finely chop the cucumber, tomatoes, mint leaves and feta, place in a small bowl
  • Pour in the lemon, olive oil, and salt and pepper to taste
  • Give it a good mix
  • With a spoon, scoop your mixture back into the avocado shells
  • Top with pomegranates and more mint leaves
  • Enjoy!
