Wake up call breakfast cookies

Doesn’t matter how old you are, cookies for breakfast will get any one out of bed.

This nutritious and delicious recipe is made up of hearty ingredients along with yummy chocolate chips, creamy peanut butter and sweet maple syrup. This recipe is great for grabbing a quick breakfast on the go or snacking on something late at night.

These cookies will last a few days and you can always freeze them in case you can’t finish the entire batch.

INGREDIENTS

  • 1/2 cup salted butter / margarin
  • 1/2 cup + 3 tbsp pure maple syrup (divided)
  • 3 large eggs
  • 1/2 cup smooth peanut butter
  • 1/2 tsp pure vanilla extract
  • 2 1/2 cups rolled oats / or overnight oats
  • 1/2 tsp sea salt
  • 1/2 tsp baking powder
  • 2 tbsp of chia seeds
  • 2/3 cup crushed trail mix (any nut will do – totally optional)
  • 1/2 cup dark chocolate chips (optional)

INSTRUCTIONS

First, you’ll preheat your oven to 375 degrees and place parchment paper on two baking sheets. Grab a large bowl and whisk the butter and 1/2 cup of maple syrup. Whisk in eggs, then the peanut butter and vanilla. Make sure you whisk all your ingredients well.

Sprinkle the oats evenly across your mixture. Do the same with the salt, baking powder and chia seeds. Fold them in with a spatula or a wooden spoon. Pour your trail mix in a Ziploc bag and crush them roughly with a jar. Pour the nuts in and chocolate chips and fold them into the batter.

Using an ice cream scoop or two spoons, scoops roundfuls of the batter onto the two cookie sheets.

Bake your breakfast cookies for 15 minutes – they’ll still be soft once you take them out. Remove them from the oven and turn on the broiler. While you’re waiting for the broiler to heat up, use a pastry brush and gently brush the remaining 3 tbsp of maple syrup onto each cookie. It’s a crime if you let any maple syrup go to waste – use it all up! Return each pan to the oven and let it broil for 1 minute – until the tops of the cookies become golden.
